serves 5 3 pieces per serving
1lb lean ground beef or poultry
45g brown rice, uncooked or85g riced cauliflower
1 small onion, diced
1 garlic clove, chopped
15 tbsp egg whites
15oz no salt added tomato sauce
15 cabbage leaves
directions cook your rice (skip this step if using cauliflower) boil water with a sprinkle of salt. quickly blanch your cabbage leaves. dry on a paper towel in a hot pan, sautee your protein, egg whites, onion & garlic. halfway through, add your rice or cauliflower. cook until 3/4 way done. lay out your cabbage leaves and portion out your mixture into each. place in a pyrex dish. pour your tomato sauce over-top. cover with foil, bake at 400 degrees until steamed to perfection!
